
1 x 250 gram packet of plain biscuits (any are fine)
50-70 grams of butter (melted)
1 teaspoon Vanilla Extract
1 x 250 gram pot Sour Cream
1 x 250 gram pot Cream Cheese
1/2 cup of sugar
1 Lemon – Juice and Zest
2 tsp of gelatin, dissolved in 2 TBS of cold water
1 x punnet of kiwi berries
1 x punnet of black berries
Drizzles of passion fruit syrup
Zizz the biscuits in a processor and add the butter.Β Press into a 20cm lined tin and pop in the fridge to set.
Zizz Sour Cream, Cream Cheese, Sugar, Vanilla and Zest/Juice of lemon in the processor, till smooth
Pop the gelatin over a bowl of boiling water and let it melt.Β Zizz with the above in the processor and combine.
Pour mix over the base in the cake tin and let sit in the fridge for a few hours.
Top with kiwi, berries and passion fruit (or anything of your choice)
