These are freaking delicious. Go to your local Asian supermarket and go crazy!
Hard to give exact quantities here, it depends on how many you are feeding and how you like your noodles… but use your taste buds as you go and add more if you need to.
A knob or so of Ginger and 2-3 cloves of garlic
A bunch of Coriander
Salt and pepper
Sesame oil, vegetable oil
Mung Beans
Sugar snaps or snow peas
Fresh noodles (oiled)
Red Chilli (I left the seeds in)
Light soy sauce, kecap manis and fish sauce
Bash the garlic and ginger in a mortar and pestle, along with the coriander roots. Add salt and pepper (I used white pepper as I prefer it) Add some oil till it is more fluid (like pesto) to make the paste
Heat the pan with a some oil and a splash of sesame oil
Cook out the paste till fragrant, add the noodles and a touch of water to loosen if you need to. As they start to warm, add the light soy sauce, kecap manis (about 2TB) and fish sauce (about 1TB)
Taste. Add what you need to.
Once everything is nearly done, stir in the mung beans and coriander leaves. Serve with sliced Chilli and lime wedges if you like.
