Eggs are quick and easy

Quiche

Sometimes, as a working mummy and wife, food gets too hard and you just get too tired.  Well I do!  You want something quick, easy and tasty that fills the empty space.

My go to guys are Quiche or Frittata.

Eggs are full of protein and so super versatile and either of these are a great way to use up those bits in the fridge that need using.  Or perfect for a picnic or lunch or dinner with a salad.  I cram mine full of vege, the boys don’t seem to notice <mwahahaha>

Quiche

Store bought savory short pasty

1 cup of chopped chicken/ham or other meat (or not)

1 cup of chopped spinach (or more)

1 cup chopped mushrooms

1 cup of grated cheese (I tend to use mozzarella)

around 5-6 eggs

around 1/4 cup of milk

You can use cottage cheese/sour cream/cream/ricotta – I would go a 1/2-1 cup of any of those, as they will bake firm, unlike milk.

Salt and pepper and lashings of herbs of your choice (parsley is a safe bet)

Sliced tomato to garnish and a sprinkle of Parmesan if you choose

Spray your Quiche tin with oil, line with the pastry.  Pop in the fridge while you mix everything (5-10 is good).

Whisk eggs and milk (or whatever you are using) and throw in the chicken/mushroom/spinach/cheese.  Season and pimp it with some fresh herbs.  Combine. Tip mix into the pastry and give it a shake and a bang to ensure even cooking.  Top with some sliced tomato and bake at 180 for around 30-40 mins.  Boom 🙂

Fritatta

This is non traditional, so don’t slate me!  But I love it and it is easy and yummy.

Olive oil, crushed garlic

2-3 cups of left over mash or crushed potato or sliced cooked potato

1 brown onion. chopped

Salt, Pepper, Paprika

around 5-6 eggs

around 1/4 cup of milk

Heat olive oil, add the onion and sweat till soft.  Add garlic.  Add potato and fry a little.  Whisk everything else and tip into the pan over the potato.  Shake a little and give it a few minutes on the stove.  Pop into the oven at 180 for around 20 mins (ish).  Serve with some steamed greens and a nice aioli or relish.

I have used pumpkin in the place of potato and added wilted spinach and grilled with cottage cheese as well – all are amazing.
