Cheaty Croque Madame or Monsier

Croque Madame or Monsier is essentially a pimped up toasted sandwich and dead naughty and dead tasty 😛  Here is my cheaty version of a couple of French Classics

Serves 2

2 Croissants, split open.  They should look like butterflies 🙂

2 thick slices of Champagne Ham, warmed in the microwave

1 handful of chopped spinach or a few slices of tomato or both

2 heaped TBS of thickened cream or Philadelphia cream for cooking and  1 decent handful of grated cheese

2 eggs, fried  *see tip*

Salt, Pepper to taste and parsley to garnish

Heat your oven to 220 on grill.  Briefly toast the butterflies so they are just warm and starting to crisp

Melt the cheeses and add seasoning to taste

Top the butterflies with a slice of ham, a sprinkle of spinach and/or tomato and a fried egg.  Slather in melted cheesy goodness.  Grill till bubbly and golden.  Garnish with some chopped parsley and devour.  Hot sauce is a good addition here too 🙂

**Tip**

Make sure you have a decent amount of oil in the pan and it is very hot before you crack the eggs in.  The whites will bubble and crackle, but we want the yolks still raw – they are going to be grilled and will get cooked, but we still want a runny yolk
