The cheapest cuts.

So many people shy way from the cheapest cuts of meat.  They are by far the most versatile and most flavoursome. Anything with bones, contains marrow, which has BOOM loads of flavour and likes to be slow cooked.  Who doesn’t like letting the oven do all the hard work while you relax with a glass wine!

Here I have used Lamb Neck Chops, but honestly you can use anything.  Beef shin, Veal shin (great with gremolata) or Lamb shanks or Gravy beef.

 

Here is a base for your slow cook

1 Large Brown Onion – sliced

3-4 Cloves of Garlic – Crushed

1 Tin of Tomatoes (or fresh quartered)  *see note*

Red wine or beef stock or a stock cube

Rosemary, thyme, oregano and any other herbs you have on hand.  Dried will be stronger in the end than fresh

1 tsp of sugar (or a TB of honey)

1 tsp of salt

Create a slurry of flour to thicken with 2TBS of cornflour and some water to slurry it, stir through everything else.

Add meat and cover.  Cook slowly at around 150 for 3 hours.  Serve with smashed potatoes or polenta and steamed greens.  Garnish with some fresh herbs.

*Note* Whenever you use a tin of tomatoes always add a tsp of sugar and one of salt to even the acidity

*Tip* At the end of cooking, stir through a TB of butter.  It will add richness and shine 🙂
