Seared Tuna with Avocado, Mango and Red Chilli Dressing

This is light, looks amazing, tastes amazing and is super easy!  The trick is not to over cook your fresh tuna.

I did this for one serving, but adjust your quantities as necessary.  There is no right or wrong when it comes to cooking, you just have to give it a crack and taste taste taste!

You will need:

1 x Avocado

1 x Mango

1 x Tuna steak

1 x Red Chilli, chopped (with or without seeds, depending on your tastes)

1 TB of Sweet Chilli Sauce, Fish Sauce and Lime Juice (add more of either to taste)

Sesame seeds – black and white if you can but either is fine, its really just to look pretty!

a handful of baby spinach leaves

Coriander to garnish

Directions:

Heat a pan till very very hot, give your Tuna a wee toss in some oil and season well with salt and pepper. Sear it over the high heat for literally 1 minute each side.  Remove and let it rest.  It will continue to cook even off the heat, but we want it to be very rare.

Open your avocado and cut into wedges.  Roll in the sesame seeds.  Set aside.

Open your mango and set aside.

In a bowl, combine the dressing of Sweet Chilli Sauce, Fish Sauce and Lime Juice with a dash of olive oil.  Toss through the spinach leaves.

Cut the tuna against the grain, into slices.

Arrange everything on the plate and EAT IT!  Yum.
