I love a Yam. They are so versatile and frankly delicious. Ugly little suckers, but tasty! Either red or apricot (as pictured), they are slightly lemony and have very soft flesh. Either roasted with some garlic and oil or boiled and squashed with some butter – you are on to a winner. Season well.
Great with fish.
I think they are viewed as an ‘old fashioned’ vegetable, but they are anything but. If you haven’t already, give them a crack! You won’t regret it.
