Salmon and Potato Cakes with Tomato and Avocado Salad

I am not generally a fan of salmon, but I will do tinned or hot smoked.  Either is fine here.  This is super easy and super cheap!

Salad

Mix equal parts of Olive Oil, Vinegar and Sugar/Honey and season with salt (lots) and pepper.  Squeeze of lemon never goes a miss here either.  Chop the tomatoes and marinate in the mix.  Throw in some diced avocado and chopped parsley.  Job done!

Fritters

1 x tin of salmon or 250grm or so of hot smoked salmon

2 x cups of mashed potato

2 x eggs

A handful of spring onions, chopped

Salt and pepper and some freshly chopped herbs

Flour to bind and if you want them to ‘puff’ throw in some baking powder.

Fry in batches till gold and drain before serving, with the salad lettuce or spinach.

Mayo – with wasabi mixed through would be good here.
