This is so good and so easy (when do I ever do anything not easy or cheaty!)
Rip up a handful or two of baby spinach, use a quick peeler to make ribbons of zucchini. Chop up cucumber (discard the seeds) and some spring onions in to rounds. Peel and cut an apple into half moons.
In a large bowl, combine the following:
1 Tbs of sesame oil, light soy sauce, lemon juice – taste it and adjust quantities if required. Add some chilli or sweet chilli. Keep tasting, this greatly depends on what you like and how many veges you have.
Mix everything and sprinkle with toasted sesame seeds.
Eat!
