I love a salad

Roast some kumara in some olive oil and seasoning, till soft and golden.

Blanch some asparagus or beans or both in well salted water and drain.

Chop your spinach.  You could add red onion or Parmesan or both or avocado.

Dressing:

Depending how many people you are feeding, go with equal parts of the following:

Red wine vinegar, olive oil, lemon juice (for 2, around 2 TB of each)

Add a tsp of Salt and Sugar and some squashed tomatoes if you like

Mix everything together while the kumara is still warm, it will wilt the spinach.

Eat!  I served this with fish.
