I am a huge salad eater. I love a salad (the boys not so much but whatever!) I love greens. They make me feel well and I like them 🙂
My sage in the garden is flowering and I have an abundance of mint and spinach….. which all lend themselves to a salad. Add ribbons of courgette and you are on to a winner. And it looks pretty. If you don’t have edible flowers on hand, use some sliced pear or orange segments. Slivers of parmesan will work well here too. Courgette doesn’t need to be cooked, I like it raw personally. But grilled or BBQ’d will be just as tasty.
2 Handfuls of baby spinach
1 Handful of Fresh Mint, torn
1 Courgette in Ribbons
Flowers
Dress with lemon and olive oil and season well w salt and pepper.
