My Saagwala (Spinach Curry)

With an abundance of spinach in the garden and two boys that screw their faces up at all things green, I had to get creative and Saagwala came to mind.

There are so many versions of Saagwala and how you make it and what you add is totally up to you and I am a dirty cheat, so this is cheaty 😛

Firstly, you need a heap of spinach, not baby.  The grown up spinach.  Hopefully from your garden, as it is so easy to grow!

Boil your spinach in some vegetable or chicken stock (or salted water if you prefer) and when very soft, drain most of the liquid.  Leave enough to ZZZZZZZ with the ZZZZZZ’er (hand blender) to puree.  Set aside.

Heat a pan and add a couple of TB of oil.  Add 1 onion, chopped and allow to soften.  Add 2 TBs of Curry powder (or more) and a tin of tomatoes.  Simmer and then add your spinach and enough coconut cream to make a relaxed sauce.

Season if required.  I added extra chilli and salt, but I am naughty like that!

I put chicken in mine (boys need meat) but you could use potatoes.  I served with rice and salad (much to their disgust)
