Christmas Cookies

I wanted to have red and green chocolate, but the green one split :\  Happens to the best of us!  I am not a fan of anything Christmas cakey or raisins..They are the devils work frankly, both of them.  (I am screwing my face up as I even type the words, gags)

So these are easy and Christmasy.  I added ginger, but you don’t have to.

Hokey Pokey Cookies w White Chocolate

125gr Butter

1/2c Sugar

1TB (or so) Golden Syrup

1TB Milk

1 1/2c Flour

1tsp baking soda

Combine butter, sugar, golden syrup in a pan and once dissolved add the milk.  Once simmering, remove from heat and allow to cool till luke warm.

Sift in flour and baking powder – and ginger or nutmeg or anything else you fancy.

Stir until combined and roll into teaspoon balls.  Squish with the back of a fork and bake on a lined tray @ 180 for around 10-12mins.  Cool on a rack and do the remaining.

Over a Bain Marie heat some white chocolate and drop in some red food colour and a knob of butter (adds shine).  Be careful w the chocolate (epic fail on the green) you need to take it slow and not over mix.  Spoon into a glad snaplock bag, snip the corner and squeeze over the cooled cookies.

Neighbours liked them, husband wasn’t a fan of the ginger though!
