Asparagus Rolls… but not as you know them

With asparagus season in full flight we need to make the most of it while it lasts.  Time to go retro with a twist on this old favourite. Or un-favourite depending on your experiences 🙂  Give this one a go, you wont be disappointed.  I promise.

1 bunch of asparagus

1 packet of prosciutto

Grated Parmesan

Butter and store bought Mayo (I use Best Foods)

Soft and fresh white bread, crusts removed

Blanch the Asparagus in well salted, boiling water for 2 minutes.  Quickly drain and rinse in cold water to cool.  Drain on kitchen roll.

Mix Parmesan with Mayo.  Taste.  Add more or less of either to suit your tastes.

Butter the bread and spread Parmesan mayo (don’t be shy)

Layer the prosciutto over the bread and place your asparagus on top.

Roll.  Eat.

**You can mix chopped parsley with your mayo too.

**Tip, use a little water when you are folding to seal.
