Nasi Goreng

This is a delicious Indonesian dish Nasi Goreng and super easy and gluten free.  You can pretty much do anything with it, but the essentials are rice, chicken, prawns and a nice fried egg.  Along with the Nasi Goreng paste that is!

You can make your own paste or you can cheat (I did!) and buy a packet of paste – you can get these from any supermarket.  You need dry rice and the packets are great and convenient and take 90 seconds to heat.  White or Brown is fine, depending on what you prefer.

You will need two hot pans – one for the eggs and one for the Nasi Goreng (large or a wok)

Enough oil, about 3 TBS in each pan

2 Large Tomatoes, chopped

1 cup of Sliced Chicken (Thighs are best)

1 cup of Defrosted Prawns

***I did add Calamari as well

Chopped green onions (spring onions)

 

Instructions:

Fry the paste in hot oil till fragrant.  Add the tomatoes. When it is looking soft, ZZZZZZ the rice in the microwave.  Add the chicken to the paste.  Give it 2 mins, then add the rest of the goodies.  Cook for about another 2 mins.  Prawns should be pink. Tip in rice, stir in with onions.

In the meantime (you need to multi task here) in a very hot pan drop in eggs to fry, you want them soft on top and crispy below.

Combine everything and top with your beautiful egg.  EAT.
