Hello 1952….

HRH Coronation Chicken Salad

I know, I know… very retro!  But it is really yummy so give it a crack.

2 Chicken Breasts

4 Cups of Chicken stock and a dash of soy sauce

4-5 TB Mayonnaise

1-2 tsp each of Curry Powder and Turmeric

Vinegar and Lemon juice

Salt & Pepper

1 Lebanese or 1/2 a Telegraph cucumber. deseeded and sliced into moons

Salad leaves to serve

Chicken

Place the chicken breasts in the stock with the soy and bring to the boil.  Take off the heat and allow to stand, covered, for 15-20 minutes.  It will continue cooking in the hot stock.

Coronation Dressing

This sounds kooky, but it is really nice and you can mix it up with what ever you fancy **see note

In a bowl, combine the following:

Mayonnaise, Curry Powder,Turmeric, Vinegar and Lemon juice

Salt & Pepper to taste

**Note:  You can add mango chutney to the Mayo and almonds or rice and peas w chopped spinach and corn or chopped tomato.

Coronation Chicken

Shred the chicken and combine with the dressing.  Tumble over the salad and cucumber.  Personally, I add hot sauce 🙂
