Seafood Stew

Easy and yummy!

1 Diced Onion

4 Fresh Tomatoes or a can

2-3 cloves of garlic

1 tsp each of Smoked paprika, Salt and Sugar

Olive oil

1 Bag of Clams (available from supermarkets)

2-3 Squid tubes, defrosted and cut into rings

1 cup of peeled prawns

1 handful each of coriander and parsley, chopped

1/2 a packet of Spaghetti, cooked in well salted boiling water

Method

Sweat off the onions in some oil add the garlic (and chilli if you fancy)

Add the paprika, sugar, salt and tomatoes and bring to simmer.

Throw in the seafood and cook for a few minutes – not long or else they will become rubbery! Prawns should be just pink and squid slightly translucent.

Tip over the pasta and toss.  Top with the herbs and serve with greens or garlic bread.
