Dear friends of mine Frances and Tony Shepherd have this crazy wild cat called Bongo. He is mental and lovable all at the same time. He makes me laugh he is so “Bongo”. No other way to describe him. So when I was making dinner tonight, Chicken Drumsticks…. Bongo Drums came to mind.
12 x chicken drumsticks
1 x can of Chick Peas, drained
6 Preserved lemons, rind only, chopped
A pinch or 2 or 3 of dried oregano
2 cloves of garlic, crushed
2 cups of chicken stock
Olive oil
Mix everything together, tip into a baking dish and pour over the chicken stock. Fan bake at around 180 for an hour. Serve with crusty bread.
