Red Curry Mussels

This is super easy and quick and more importantly tasty, full of goodness and low in fat!  Here I have used NZ Green Lipped Mussels.  Scrub the mussels in a sink of cold water and remove the hairy beards (How to clean mussels) and set aside while we get ready.

Olive Oil (or Vegetable or Gee)

1 x Onion, diced

1/2 a Jar of Store bought Red Curry Paste

1 x can of Coconut Cream (or Milk if you are feeling virtuous!)

Lime Juice

Coriander leaves and Lime wedges to garnish

Diced chilli (optional)

Sweat off the o

Onion in some oil till it is translucent, add the Curry Paste and cook it till fragrant.  Add the coconut milk/cream and the mussels.  Cover tightly with

a lid and allow to steam for around 5-8 mins.  They are done when they pop open.  Discard any that don’t open.  Scatter with the garnish and tip over the sauce.  Serve with bread to mop up the juices 🙂
