Toad in the Hole

This is a winner with the family and dead simple!  One dish, sausages baked in essentially Yorkshire pudding with lashings of gravy.  Can’t go wrong!

8- – 10 sausages of your choice.  Traditionally they are pork, but I used beef and mushroom in this dinner.  Chicken, Vegetarian Sausages.  Whatever tickles your fancy.

Batter

1 cup of SR flour – sifted

Large pinch of salt and a good grind of Black Pepper

4-5 large free-range eggs

300ml Milk (I use full fat)

2 tbsp of herbs – Thyme is great, but it so depends on the type of sausage you are using.  Rosemary, Sage, Parsley.  Really anything that you prefer.

1 TBS of Mustard if you like it (the boys don’t so I add mine afterwards)

 

Beat all together – you want to have a reasonably loose batter.  Like a crepe or pancake.  and let it sit at room temperature while you do the sausages and gravy.

Sausages

Heat the oven to around 200 on fan.

Brown the sausages in a hot pan with some oil or butter – they don’t need to be cooked right through as they are going in the oven.  Just browned.  Set aside.

Pop some lard or duck fat or olive oil into a dish for baking (mine is rectangle 20 by 10 ish) and pop in the oven till HOT.

Place sausages in the dish and tip over the batter – be careful, there might be splatters of hot oil.  Wack in the oven for around 30-40 mins.  It should be puffy and brown.

Gravy

In the sausage pan add:

1 sliced brown onion and saute till soft.

I am a dirty cheat and use Bisto to make gravy.  Coz I can and it works every time!  A few TBS and some water and you are done.

 

Serve

With steamed greens.
