Coke Ribs w BBQ sauce

For those of you that know me well, you know I hate Coke and all things sugary…. however…. Coke is a great marinade and particularly good with pork.

We got some pork ribs on special and a bottle of coke (I did not let kid drink it!) and some BBQ sauce. And they turned out great.

1 x rack of pork ribs

1 x bottle of coke (think it was 1.5)

1 x bottle of store bought BBQ Sauce

Marinate the ribs in the coke for a couple of hours.  Heat the oven to 150 and allow the ribs to cook in the coke for couple of hours.  Remove ribs from the coke and place on a lined baking tray.  Crank oven up to around 220 on fan and baste ribs with the BBQ sauce.  Bake till all delicious and brown and glossy!

Serve with Coleslaw, Wedges, Corn and lashings of ranch dressing!  Napkins at the ready, yummy and messy!
