Marinated Tomato Dressing

This is one of my favourite dressings and as we are coming into summer, I thought I would share it with you.  Super easy and a good way to get lycopene!  The longer they sit, the softer they become and are easy to squish.

1 tub of cherry tomato’s halved

1 teaspoon of each Sugar and Salt (I used maldon)

2-4 Tablespoons of each olive oil and white wine or malt vinegar (taste and adjust)

A decent grind of black pepper

Mix and leave to sit for an hour or so.  Taste and add more of anything if required.  You can use honey rather than sugar if you prefer.

Squish with the back of a fork and serve over a a nice green salad, with BBQ meat or roast chicken.
