Cookies to fight over….

These are so simple and so tasty.  The boys get cross when I share them with the neighbours… Work colleageues run to the tea room when they hear there are cookies waiting there!

Great weekend project, they are better just out of the oven and the mix will keep in the fridge.  I tend to bake 6-8 at a time depending how many are eating them and roll the rest of the mix into balls and store in the fridge till I want to bake more.

125 grams of soft butter

3 TBs of sweetened condensed milk (about 1/2 a tube)

1/4 cup of caster sugar

a good dash of proper vanilla essence

Beat till pale and combined

Sift in 1 1/2 cups of self raising flour (or plain flour with a heaped tsp of baking powder) Drop in a handful (or so, I am normally quite generous) of chocolate chips

Combine – it will be quite dry.  Don’t worry.

Take heaped tsps of the mix and roll into balls.  Place on a lined baking tray and squish with the back of a fork.  Bake for 12 ISH minutes (depending on your oven) at 180.  They will still be soft when you take them out, but they keep cooking.  Remove carefully onto a rack and allow to cool slightly (they will crisp up)

 

**Variation**  Add a TBS of coco powder to the flour and change out the milk choc chips for white chocolate chips
