Okay, so I know it has been a while…. I kind of lost my way and was even getting a bit bored of myself! Any-hoooo! I got some inspiration last night at the butcher shop, they had chicken breast mince on a quick sale for $4 a pack (that’s a lot of chicken mince!) anyway on a whim, I grabbed 2x packs. Then thought…. oh, now what…. so I came up with this.
A Bunch of coriander, stalks and all. I used some thyme as well
4 cloves of garlic and 4 shallots
A decent wack of salt and white pepper
Around 2 TBS of lime juice and 2 TBS fish sauce
Zizzzzzzz in a Zizza till Zizzed.
Combine with 500 grams of chicken mince and 1 egg.
Pop in the fridge to set for a bit, then roll into TBS sized balls.
Heat (quite hot) a pan with some oil and a few drops of sesame oil and carefully place balls in and brown on each side. Because they are quite fragile, and we are going to keep cooking them – you simply want to brown quick. Remove to a bowl.
Using the same pan, pop in some red curry paste. I used around 1/2 a jar of store bought red curry paste. Fry off till you can smell the fragrance. Tip in a can of coconut cream and 2 ladles of chicken stock. Stir and bring to the heat. Taste. I added extra chilli at this point. It is really to taste.
Pop your meatballs back in and let them simmer for 15 mins till cooked through.
Top with some extra coriander and sliced chilli if you fancy.
Serve with rice or noodles and something green.
