**Thai Style**
These suckers are delicious! The boys ate them all…even though I thought there would be leftovers for lunch, demolished! Guess it is ham sandwiches for lunch 😛
Super easy and super tasty. You just need a zzzzz’a and a pan with some vegetable oil.
Depending on how many you are feeding, I would go with 1 part Fish and 1/2 part Raw prawn. I used Monk Fish as it was cheap today. Defrosted frozen prawns are a breeze and not expensive when using them like this. As I am lazy, I got the frozen mashed potato…. naughty I know, but it is actually quite good!
400 grams (ish) of fish. Whatever is fresh and on special. I think firm is better.
200 grams (ish) of defrosted raw prawns.
Zzzzzz in a food processor and transfer to a bowl.
Stir in mashed potato.
Mix in enough beaten eggs to make a nice fritter type batter. You don’t want it too runny at this point, you can always add more liquid.
Chop some fresh Coriander (I used a whole bunch), chilli and spring onions (scallions) and mix. Mix in some fish sauce and lime juice to taste. There are no rules. Its really just how you like it. White pepper might be good.
Heat your pan with some vegetable oil – just to medium.
Drop large tablespoons of the mix into the pan and give it a squish to flatten. Cook till golden. Pop on a Handi-towel to drain and repeat process. They don’t need to be super warm, its summer (apparently anyway!).
Dressing
Equal parts
Sweet chilli sauce, Fish sauce and lime juice.
I served with salad.
