Sweetcorn Fritters

I got given a lovely cookbook at Christmas time and it has a sweetcorn fritter recipe in it. I LOVE sweetcorn fritters and frankly it is too sodding hot to even eat or cook. As per usual, I didn’t follow the directions…. but this is what I did.

1 half spring onion

2 eggs

1/2 cup milk

1.5 cups SR flour

1 tin of each creamed corn and whole corn

Chilli, salt and pepper and coriander. I like lots of all, but to taste!

ZZZZZ the onion,egg, milk and coriander in a processor. Tip into a bowl. Mix in the corn.

Sift in the flour. Mix. You should have a nice pancake like batter. Give it a taste for seasoning.

Heat some oil in a non-stick pan (I used canola in this instance) and drop tablespoons (or more or less depending on what you want). Cook till brown on each side.

Serve with green salad, crispy bacon and sour cream.
