I can’t bake. It’s not my thing. But I can make a decent panna cotta. And if I was being totally honest, it is probably the only desert I eat (no sweet tooth here) and this is so sodding easy. You all must give it a crack. Super impressive and can be done well in advance. I like to serve in glasses rather than turn out, but it will work either way.
Depending on how many you have this will do 4
Panna Cotta
250mls full fat cream and 250mls full fat milk
Vanilla (around a tsp or use a bean) and sugar to taste (around 1/2 cup or less) or honey.
Tip all of the above into a pot and very slowly bring to a simmer. Keep stirring. Soak 3 leaves of gelatine in cold water. Just before it boils remove from heat. Squeeze the gelatine and stir into your mix. When dissolved, allow to cool COMPLETELY. I mix every now again. If not completely cool, it will split otherwise. Fill your glasses with the cool mix and cover with glad film. Into fridge.
Berry Compote
Grab some berries of your choice, I used a mix. What was on special in the frozen section. Drop in a pot with a 1/4 cup of water and 1/4 cup sugar (or honey) and lashings of Brandy and Cointreau. Or Orange juice or peel. Its all about the flavour. Reduce down to a syrup and cool. Pop in a jar or container and put in fridge.
They both need to be in overnight. When you are ready, take the glad off, drop the berries on and grate some chocolate. WINNER!
