Cheesecake

Boys love it and moan when I don’t make it. I care less, I don’t eat it. But it makes them happy. Not that it is hard to make, now who is moaning! It’s one of those things that people go “wow you are amazing” . Nope, I am lazy. But clever 😛 I do make them do the dishes, not that there are many. This is dead easy and you can mix it up and use what you fancy or what is readily available. And always a winner. You need a food processor, doing it by hand is way too hard.

1 packet of plain cookies (depending on what you are making, you can use chocolate or oat or digestives)

75-100 gr of melted butter

Zest of 1 lemon

1 tub of Sour Cream (250gr)

1 tub of Cream Cheese (250gr)

1/2 cup of sugar

Juice of the lemon you zested and some vanilla

2 tsp of gelatin, dissolved in 2 TBS of cold water. Then you need to sit the sticky paste into another bowl of hot water (like a bain marie) and it will become liquid again.

Line a 20cm cake tin with paper. ZZZZ the cookies, and zest till crumbly. Slowly add the butter. It should be soft, but still crumb like. Hard to explain, but it will work! Tumble into tin and grab yourself a glass or something with a flat bottom. Squish the crumb into the tin, so it is flat. Pop in fridge to cool.

Clean processor. Wizz sour cream, cream cheese, sugar and lemon juice and vanilla. Taste. Gelelatin. Wizz. Tip over the nice cold crumb.

I hunked up some Whittkers white chocolate and defrosted rasberries and tumbled over, with the back of a simple butter knife I gave it a swirl.

Boom.

If you are chocolately, you could use maltesers or caramel or salt or mango and pineapple. Just a basic easy to do and always a winner! Make it your own!
