I hate to bake, I suck at it. But I also hate waste. I had yoghurt that needed using up so made a cake. Normally I would use a hand mixer, but today I was being especially lazy, so dumped everything in the food processor. The cake was massive! Raised like a super star. Yay for the food processor! Really, really simple recipe and takes 40 ish mins to cook. Not a naughty cake, yoghurt! Can’t go wrong. And you can put what ever you like on it. Goes down a hit in our house.

2 eggs, 1/12 cups sugar, 3/4 cups of vege oil and a 1 cup of thick Greek yoghurt. 2 Cups of self raising flour. Whizzzzzzzzzz! Tip into a lined cake tin and bake at 180 for 40 ish mins.

I tipped over some store bought compote. Strawberry, Raspberry and Rhubarb this time. But you can honestly do what ever you want and what ever you have on hand. It is a nice moist cake. If I bother to do it again I will make citrus syrup and candy some lemons.
