Beer Bread

This is so easy and always a hit. Quick to make and no fuss. Really good straight out of the oven or toasted the next day with lashings of butter and salt (oh how I miss salt….) You can add whatever you have on hand. In this particular one, I used some sun dried tomatoes. But you can run with olives. It is pretty fail proof.

3 cups of Flour (I sift it well)

3 tsp of Baking powder (or just use SR flour)

1 bottle of beer, made up to around 500mls with water or just use all beer! I normally use lager, but a stout might be nice too.

Grated cheese – about a handful and some. Anything you have/like is fine. Something that melts well is ideal. Or a mix. I am quite keen to try this with a creamy blue cheese. That would be nice with a relish. You can only but try! We don’t always win, but you don’t know if you don’t try!

Salt. I like cayenne pepper too.

Make a well in your sifted flour, dump everything in and give it a mix with a wooden spoon. At this point you can throw in your olives/carmalised onions/parsley. Add more liquid or flour if you need to. It should be soft and a little sticky. Don’t over mix, you will get a tough bread. Just let it come together.

I am lazy, so I just line a baking dish with baking paper, give it a spray with oil, sprinkle with some more flour. Dollup your dough into a rough round, sprinkle with more cheese and bake at 190 ish for around 45 mins
