Chilli Beans with Baked Spud

Super easy, nutritious. Kiddo needs a truck of protein with his crazy rowing schedule, so this gem ticks all the boxes. Carbs, double protein, calcium and dead easy.

4 x Baking potatoes or kumara (I dislike the red ones, but orange are good))

1 large onion – chopped

Garlic, salt, pepper, sugar, about a teaspoon of each. But to taste.

400 grams of premium mince

1 can of Chilli Beans (I used watties). Not overly hot, so add so add some chilli. Again to taste.

Grated cheese, sour cream, butter, chopped spring onions

Coleslaw to serve. Ranch dressing.

Heat oven to 180 . Poke Potatoes with a fork. Line a dish and spray with oil. Bake for about 1.5 hours. If you are short on time, you can microwave for 10 mins, then pop in the oven for around 30-45 mins.

Heat some oil in a pan, sweat onions/garlic, etc until soft. Drop in the mince, stir till brown. Stir in the chilli beans and heat through. Salt and sugar. Taste for chilli .

Cut open the potatoes, a good TB butter, chilli, cheese, sour cream and spring onions.

Serve with colesla and ranch or a green salad
