Easy Omelette

I don’t know about you guys, but recently I have REALLY been struggling coming up with dinner ideas. Given I have thousands of cookbooks and magazines… I have no excuse really. But I just get bored! And I hate to say it, but I am reasonably picky. The boys need carbs and protein. I am happy with salads – but I do need protein. Anyway! I said to man child “F&%# I don’t know what to make” Response “Give me that bloody magazine”. Okay… Closes eyes and picks something. First choice was tofu (which I am fine with) “are you sure? that is tofu” “Oh ^%$@ that. I want that one” Next recipe on page. Did not even read it. Okay sure. Something different. Had everything, just needed more eggs and shrimp. Total winner!!! Cheap as chips, filling, easy to eat, tasty, low in fat. I did add a few bits to suit me. Give it a crack. It will be a staple in our house now.

Depending on how many you are feeding, this is a guide. Just eyeball it and follow your gut. My boys are decent eaters, I am a picker (it usually ends up as breakfast!). I did add stuff. Follow your taste buds.

Defrost your shrimp and dry off. I used a bag. Man child doesn’t like prawns. So these work for him. Just little and quite sweet.

Heat oil in a pan with some garlic, chilli, lemon (zest and juice). I salted it.

Saute the prawns with everything and set aside.

1/2 pack of Vermicelli noodles, soaked. Rinse and hack with scissors into smaller bits

5-6-7 Free range eggs mixed with fish sauce and soy sauce. Add some coriander.

Cook omelette in some hot oil, fold and top with shrimp and extra coriander.

Personal choice, I added more fish sauce and soy. Touch more of salt.
