Roasted Tomatoes with Balsamic and Honey

These little morsel are so delicious, like little explosions of flavour in your mouth.  Exceptionally good with salad.  And the cooking juice becomes the salad dressing.  BOOM!  2 birds, 1 stone.  I am so lazy, but it works so well…so why not!  And waste not want not 🙂

Depending on how many you are feeding… this is a basic guide for 2 people for a salad.

1 punnet of cherry tomatoes (I used the mixed ones, yellow, black and red)

Olive oil

Maldon  Sea Salt (you can use either standard or smoked) and Cracked Black Pepper

Liquid Honey and Balsamic (I used Raspberry Balsamic abut anything is fine)


Heat the oven on fan to 180.  Drizzle the olive oil and balsamic over the tomatoes in a lined dish. Toss to coat.  Add Salt and Pepper.  Drizzle with the honey.  Toss again.  Bake for 15 ish mins, till they are starting to soften.  You will smell  the goodness!  Allow to cool and toss through a salad.  I used red onion, cucumber, blanched asparagus and avocado.  Smoked chicken, BBQ, Steak.  Anything really!
