I love a cauliflower. I know lots of people don’t. But I maintain if raw, or cooked properly (i.e not to death so it is mushy and smells like farts) it is a great winter vege. Really cheap and super easy to grow if you have a garden. Versatile. So many things you can do with the humble Cauli Wolli!
So, I am on a low sodium diet. Which has basically been ruining my life. I love salt. However, I have taken the challenge and embraced it and am trying to live a life with no salt and LOTS of flavour. I have good days and bad and you would be surprised how much sodium lives in every day food and just how addictive it is when you come off it.
So hungry catapillar went on a hunt on a Sunday afternoon for something satisfying and tasty and warm and fill my belly. Hey, hello cauliflower!
Heat oven to 180, line a baking tray with paper.
Break or cut small florets and scatter on the paper. Drizzle with a little olive oil and honey. Sprinkle with a bit of curry powder and a splash of Apple Cider Vinegar.. Toss and bake for around 20 mins – you will start to smell them. Serve with greek yoghurt or tzatziki to dip.
So good, even my husband gave them a nod!
