Random Acts of Cheesecake

There aren’t many sweets I am any good at. But I can make a killer cheesecake. When a FB message came out on our local page, from a person I have never met, asking for help for a friend who’s birthday it was and has just lost his wife… cheesecake. Hopelessly easy and most people like it! Sounds silly, but I strongly believe in paying it forward. Do kind things for others and something kind will come back to you. It is not hard to be kind and it doesn’t cost anything. Do something nice for a person who needs a smile when life gets a bit tough. Apparently he was in tears. Bless.

I am lazy and this is dead easy

Pick what topping you want – this will help with picking your biscuits. If you want to go Tropical (pineapple/mango etc) -Krispie. Plain, go round wines or super wines – these work with anything well. In this case I got a bottle of lemon passionfruit curd/sauce and used plain vanilla wine biscuits.

1 x packet of biscuits

melted butter – 50-70 grams

250 tub of sour cream

250 tub of cream cheese

1/2 cup of sugar

3 sheets of gelatin leaves, soaked and melted down above hot water

Pop your biscuits in the food processor and ZZZ add melted butter and (depending on biscuit type you might need more than 50grams) ZZZ again to combine. Tip into a lined tin and squish down with a flat glass/jar so it is flat. Pop in fridge to set while you do the rest.

ZZZ your sour cream/cream cheese with your sugar and melted gelatin till very smooth. Add lemon zest if you fancy.

Tip mix over the set base. Tip over your topping and use a knife to swirl it about.

Set in the fridge for a few hours. EAT!
