Fresh Summer Salad

It has been so hot, I have no interest in eating anything other than salad.  This is not everyone’s idea of a salad, but I love it.  I love the sweet seasonal fruit with the salty bite of the prosciutto and the creamy mozzarella. 

This is what I did but honestly use whatever is fresh and on hand.  Nothing has to be perfectly cut, just rip/tear or whatever.  There are no salad rules.  This was just for me, the boys were out.

1 x White peach

1 x Mango cheek scored (see picture below)

Some rockmelon… just what I had in the fridge.  About a half of a half I guess

Prosciutto.  I love it, so used a small packet <my bad>

Baby mozzarella, torn.

Black pepper.

Tumble lettuce and fruit all over.  Scatter your prosciutto and mozzarella over the top.  Crack some black pepper over.  I did a balsamic drizzle, but you could use any dressing you fancy (or not).  Something with some acid would be nice (orange/lemon/olive oil)
